They're turning the old Country Kitchen restaurant into a bank. They call it remodeling, but there's only about two support pillars and half a roof left of the Country Kitchen. In five years no one will remember what it was.
Directly across from the actual Pizza Hut, there's a coffee house that used to be a Pizza Hut. On the other side of town there's a Mexican restaurant. It used to be a Pizza Hut, too. Unlike the Country Kitchen/bank, you can tell they used to be Pizza Hut restaurants, because, face it, it's hard to disguise trapezoidal windows.

I know that I'm no longer new in my town because I remember when the Starbuck's was the one little corner video store that bravely tried to compete with Blockbuster.

And that reminds me. Both the coffee shop and the Mexican restaurant are non-chains. As I suppose they'd have to be--Dominoes is probably never going to want to take over an old Pizza Hut.

With plenty of chain restaurants having vacated their unique buildings over the last decade, it is fun guessing which chain previously occupied a particular building. Some have been extensively remodeled, while others less so. Around here, those buildings are typically reoccupied by Chinese or Mexican restaurants. However, an Embers on Lake Street was subsequently occupied by an Ethiopian restaurant, which beautifully remodeled the building.

I think the other Happy Chef in town (the one that isn't a sports bar) is now an Embers so, Embers-wise, things must still be in balance.
I have to admit it's good to see these buildings reused rather than torn down so there's nothing but a parking lot and weeds remaining.
